VINIFICATION: The harvest usually takes place in the first half of October. The harvest is manual in order to carry out a careful selection of the grapes already in the vineyard: only the perfectly healthy and ripe ones arrive in the cellar for vinification! The grapes are 100% de-stemmed, fermentation takes place in steel, the temperature is maintained around 28 ° C for the duration of the maceration. The must-wine remains in contact with the skins for 6-8 days, after which it is drawn off. In order to preserve the freshness of the aromas and the roundness of the taste and avoid the presence of too hard tannins, press wine is not added to the mass, only the flower wine is kept. The malolactic fermentation is carried out completely in steel and the refinement in tanks on the fine lees lasts a few months. Bottling is scheduled every year for late spring.
