VINIFICATION: The harvest at the end of September with perfectly ripe and carefully selected grapes. The whole grapes are kept in the press for 5 hours at a temperature of 15 ° C then proceed with a soft pressing followed by cold static decantation. Alcoholic fermentation is carried out at 18 ° C in steel containers. The wine is stirred on the fine lees for a few months before being filtered and prepared for bottling.
