VINIFICATION: It is a wine that is born on the sides of our mountains, unique if you think about the trinomial variety-territory-microclimate. Aged in tonneaux for about 12 months, this Syrah is very balanced, with elegant and complex aromas: aromas of mountain woods, resins and wild spices, of flowering thyme. The full and round flavor refers to the nose for its pleasant and persistent aftertaste.
Harvesting at the beginning of October is manual in crates, the grapes arrive in the cellar healthy, intact and perfectly ripe. The grapes are de-stemmed, ferments at a controlled temperature of 24-25 ° C, 4-5 days in contact with the skins, racking of the flower only without adding press wine. The malolactic fermentation is completely carried out in steel, storage takes place on the fine lees and bottling is scheduled in spring to preserve the freshness of the aromas.
